this is a very tasty recipe that can be eaten as a side dish, dolloped on a salad or as part of a wrap/sandwich spread.
1 head cauliflower, washed and chopped
1 cup really raw cashews
3/4 cup sun dried tomatoes, soaked in warm water
1 bunch fresh basil
1/8 – 1/4 cup olive oil
2 T lemon juice
1 tsp italian seasoning
1 good pinch Celtic sea salt, the coarse gray kind
Put all the ingredients in a food processor and blend until smooth and creamy. Enjoy!
