Had some cauliflower that was needing to get used, so I whipped up this recipe quick style. Enjoy!
- 1 head cauliflower, washed and chopped
- 1/2 – 3/4 cup really raw cashews
- 3/4 cup sun dried tomatoes, soaked in warm water
- 1 bunch fresh basil
- 1/8 – 1/4 cup olive oil
- 2 T lemon juice
- 1 tsp italian seasoning
- 1 good pinch Celtic sea salt, the coarse gray kind
Put all the ingredients in a food processor and blend until smooth and creamy. Enjoy!
Serving Suggestion: This is how we’ve been eating this the past couple nights — Take a collard leaf and add a spoonful of your favorite raw cheeze, I used myRAWvarti cheeze that I make (SO good!). Add some baby greens, sliced carrots, chopped cabbage, a spoonful of the Cauliflower Whip, dulse, red pepper, stuffed green olives, and any other thing you like to add to your wrap sandwiches. Roll up and eat. This is the BEST sandwich ever! I’ve been feeling so very grateful for this dinner each night.
