RAW MAYO

This makes a lot so you’ll have it for other things. Put it in a jar and keep it in your fridge. Replace it for the regular mayo that you normally use:

Ingredients:

  • 1 avocado, peeled and deseeded
  • 1 cup soaked cashews
  • 1 tablespoon additional lemon juice
  • 2 tablespoons apple cider vinegar
  • 2-3 teaspoons agave
  • 1 teaspoon italian seasoning if you have it, not necessary
  • 1 clove garlic
  • a good pinch of celtic sea salt

Blend everything in the VitaMix – you made need the plunging thing to push the ingredients down as this is very thick. VOILA! You have creamy mayo! You can also put everything in the food processor and blend it up that way. Easier but less creamy. It’s a very nice recipe. Only add a little to your sandwiches as a little goes a long way.
