A couple distinguishing things to note about Sacred Chocolate — We include the raw skin of the cacao been in our single varietal Arriba Nacional Aromica from Ecuador for phytonutrient super nutrition (no other chocolatier in the world is presently doing this!), and we never roast our beans. We make it the old fashioned way…slow stone grinding from bean to bar at low temperature to keep the antioxidants three to four times higher than dark chocolate of the same percentage cacao content, which uses roasted beans. And, we use Maple Sugar, which is only 55 on the glycemic index, and is high in manganese, zinc, potassium, epicatechin, and quercetin. We recognize the importance of cutting edge nutritional science and therefore incorporate a low temperature process in our production of Sacred Chocolate. Our cacao beans are truly raw and all manufacturing processes are kept at low temperatures (below 114 degrees F) to ensure maximum antioxidant retention and minimal trans fatty acid production. Our ingredients are always raw where possible (only our organic maple crystals are not raw) and we always use the highest quality organic or wild crafted ingredients.
The special things we do in order to deliver the best chocolate bar ever include:
1) All bars are made with David Wolfe’s 100% certified organic, raw (very low fermentation) Sunfood Nutrition brand Ecuadorian Aromica variety cacao nibs, cacao beans and cacao butter. We avoid the use of weak cacao “filler” beans to boost cacao percentages (weak filler beans are often used in the chocolate industry, yet this is unknown to the public).
2) We always use the highest quality ingredients no matter what the price. We never cut costs by using inferior ingredients such as lightly roasted cacao nibs sold as “raw”.
3) We avoid cane sugar which is used in every major organic chocolate bar on the world market. We believe cane sugar, even if organic, is a toxic and dangerous substance. You might ask, “Why do we use Organic Maple Crystals?” Although the cost is MUCH higher than cane sugar (more than five times higher) the reasons are a) flavor – it smells like a Canadian forest in full bloom, b) forests thrive – the growth of reforests are fostered by using more maple products and c) the “vibration” of maple feels the highest to us of all the sweeteners!
