3 carrots, shredded
2 purple potatoes, shredded & rinsed
2 beets, shredded
2 cups shredded cabbage (about 1/2 a head)
2 cups Carrot-Cashew-Ginger Dressing
In a salad bowl, toss together the carrots, potatoes, beets and cabbage. Drizzle the dressing on top & serve.
