Strawberry Pudding Parfait
I added an optional ingredient for chia seeds. Yes, remember the chia pets? Same thing! They are good sources of EFAs (essential fatty acids) both Omega 3 and Omega 6 and are a good source of fiber as well. Chia seeds plump up in water and have a tapioca-like consistency to them. I added them to thicken up the pudding but if you don’t have them, don’t worry about it. If the pudding seems a little runny, add a few more nuts to thicken it up.

Ingredients:
Pudding:
1/4 cup water
1/2 cup macadamia nuts
1 large banana (or two small)
1 tablespoon raw honey or agave nectar
1 teaspoon chia seeds (optional)
vanilla

Topping:
4 large chopped strawberries
Handful of other berries of your choice

Preparation:

In the VitaMix, add the pudding ingredients and blend until smooth and creamy. If you are adding the chia seeds, they will help to thicken the pudding. Refrigerate for at least 1/2 an hour to set. If you don’t have a vitamix, use a blender or food processor.

While you’re waiting, slice the strawberries and put aside. Take two lovely serving glasses and have ready to prepare these pretty desserts (or breakfasts!) Once the pudding is set, put a spoonful in each serving glass followed by a handful of the berries, add half of the strawberries, then add more pudding on top and sprinkle the top with the rest of the strawberries. TA-DAA! You are done. The easiest and prettiest little parfait you’ve ever made. Make it with your kids. They’ll have fun with it, too!
