1 cup raw cashews 1 cup frozen mangos (fresh would work too) 1 tsp honey 1 tiny squeeze of lemon 1 1/2 cups water (start with a cup and add more if necessary) In the Vita-Mix, blend everything until smooth. Pour in a bowl. Emily decorated the yogurt with more sliced bananas but wished she had strawberries. We skewered the fruit onto clean "stickebob toothpicks" as Emily called them. We all ate and enjoyed a very awesome snack and I thanked Emily for coming up with the good idea to make that today. She is very full of great ideas!
Makes 12. This makes quite a lot (3 cups +) so if you are using fresh (and not dehydrating), then cut it in half and freeze half - it will freeze well. You can dehydrate this as well to make a firmer cheese. I adapted this from a recipe off of goneraw.com - enjoy!
By Frederic Patenaude 1 cup walnuts 1/2 lemon, juice of 2 tsp. chili powder (organic) 2 Tsb. chopped onion 1 large red bell pepper, diced 1/2 cup sun-dried tomatoes, soaked and diced Instructions: Mix all of the ingredients in your food processor. First, liquefy the walnuts and lemon juice, then add the other ingredients, and keep on mixing in your food processor, but without blending. Serve inside green lettuce leaves.
