Todd's Waldorf Supreme

This recipe came to me from my friend Terry. She made this for us when we attended Alissa's class a couple year's ago. This was the best tasting thing I had had and I went home and made it like every day for like 2 weeks straight. I have modified the recipe a little bit. Enjoy!

Ingredients

  • 2 of your favorite apples, chopped
  • 2 medium - large tomatoes, chopped
  • 1-2 ripe avocados, chopped
  • 1 cup radishes, chopped
  • sweet onion, chopped
  • Small drizzle of olive oil
  • Pinch of celtic sea salt
  • Dash of cayenne pepper
  • Optional additions: Handful sprouts (alfalfa, radish, etc) 1 orange or red bell pepper, chopped
Preparation This recipe requires that you hand chop everything so that takes a bit of time but it is SO worth it AND the only energy you are using is YOUR OWN! No appliances necessary - woo-hoooo! Double the recipe for a picnic or potluck. You'll totally want to eat a large serving of this. If you do double it, adjust the avocado - don't go crazy. 2-3 avocados is more than enough. You really don't need 4 avocados although I do love those things. They are so heavenly. Chop everything and put it in a big bowl. Stir it around and don't be afraid to mix it so that the avocados become like a dressing. I've used avocados that I froze and they've worked out just fine although fresh is best. Serve and enjoy. This is SUCH a refreshing dish and it's been my dinner countless times. (Same for lunch!) It's crunchy, it's juicy, it's SO flavorful.
